QuestionI am interested in getting pink and white nails for the summer. I currently have regular acrylics. Is it a good idea to get the pink/white over my current acrylics? I've been told I should start over completely for the best look.

There is absolutely no reason why a good, qualified and experienced technician could not simply reduce the bulk of your existing overlay by filing and then just rebalance over it with pink and white.
A couple of reasons why they might tell you to start over:
1) they are NSS and are not properly trained OR take shortcuts that damage your nails. (see here for more info: http://ongles-chez-victoria.tripod.com/victoriasnails/id18.html
2) You have an inexperienced technician WHICH IS NOT A BAD THING but who has difficulty doing a rebalance in such a manner. As long as the existing acrylics are SOAKED OFF and NOT filed/pried/ripped/forced off, it's ok
3) You have an unethical technician who is looking to make extra money by forcing you to soak off.
4) You have a technician that can not apply a french without using white tips, and so they must be soaked off to allow this to happen.
If it is only that you have an inexperienced technician, but you are thus far happy with the services, then do as she suggests.
HOWEVER if you have an unethical and/or a NSS Technician, I urge you to go elswhere and seek out a better Qualified and conscientious technician.
