Easy Chinese Vegetable Soup Recipe: A Healthy & Delicious Dinner

Like most Chinese foods, the vegetable soup uses a lot of vegetables. Chinese vegetable soup is low on calories. But it is high on nutrients. It has nutrients like folic acid, high-fibre vegetables.

How To Make Chinese Vegetable Soup:

Ingredients:

  • 32-ounce vegetable broth.
  • 2-3 tablespoons of sunflower oil or peanut oil.
  • A saucepan with a lid.
  • 1-2 onions (sliced).
  • 1 cup of finely chopped celery.
  • 2-3 cups of Chinese cabbage.
  • 1 can of water chestnuts.
  • 1 cup of fresh snow peas/frozen baby peas.
  • 1/2 cup of sliced mushrooms.
  • 1 tablespoon of soy sauce.
  • 1 teaspoon of rice vinegar.
  • Salt and pepper to taste/seasoning blend.

Step 1:

To begin with, take a small saucepan. Add vegetable broth in it. If you are somebody who doesn’t want a salty soup, go for low-sodium broth. You can also opt for low-fat broth. Keep the broth hot. Leave it for some time while you get busy to prepare vegetables.

Step 2:

Here, take another saucepan and heat sunflower or peanut oil. Take an onion. Slice it. Put the sliced onions in the saucepan. Add finely chopped celery and Chinese cabbage. Shred the cabbage before you dump it in the saucepan. It is a general belief that napa cabbage is a good option because it is said to absorb the flavors of the soup.

Step 3:

Now, add water chestnuts. Ensure you use canned water chestnuts. Drop some fresh snow peas. If you don’t have snow peas, use frozen baby peas. Cook till the cabbage shows signs of getting softened. You can also add sliced mushrooms to the mixture in the saucepan.

Step 4:

In this stage, pour out the hot broth from the first saucepan to the soup mixture. To this new mixture, add soy sauce. Also add rice vinegar. Sprinkle salt and pepper. You can also use the Chinese seasoning in the place of salt and pepper.

Step 5:

You have finally reached the last stage of cooking the vegetable soup. Cover the saucepan. Let the soup simmer for 8 to 10 minutes. To the soup, add parsley.

Your soup is ready! Serve it in soup bowls.
