  • 3 Tbsp peanut oil
  • 2 Tbsp garlic paste
  • 2 shallots finely chopped
  • 2 Tbsp ginger paste
  • 2 Tsp lemon juice
  • 2 Tbsp butter
  • 1 bay leaf
  • 1 Tsp Garam Masala
  • 1 Tsp Cumin Powder
  • 1 Tsp Coriander Powder
  • 1 Tsp Kashmiri Chili Powder
  • 1/4 cup yogurt
  • 1/2 cup cream
  • 1/4 Tsp cayenne pepper
  • 1/2 cup milk
  • 1 cup tomato puree
  • Salt
  • ¼ Tbsp fenugreek leaves
  • 1/4 cup cashew nut (powder)
  • 500 gm chicken (thigh pieces, deboned, skinless)
  • Tandoori BBQ Mix

How To Make:

  1. In a medium sized bowl, add yogurt, a generous dose of Tandoori BBQ Mix and half the ginger and garlic paste. Season with a dash of salt, pepper, and lemon juice. Add the chicken to the bowl and mix well for at least 5 minutes. Let the chicken marinate for at least half an hour so that the yogurt tenderizes the chicken.
  2. Take a pan and heat it on medium flame. Add the butter and let it melt. Now add the onions to the pan and sauté them until they turn translucent (approx 4 minutes cooking time). Proceed to add the remaining ginger and garlic paste and cook for another minute. Add the fresh tomato puree and spices like chili, coriander, cumin powder. Let it cook for five minutes. Turn the stove off and keep aside the paste for 10 minutes.
  3. While the sauce cools, you can heat another frying pan and add a tablespoon of peanut oil. Add the marinated chicken and cook it for 5-6 minutes. Be careful not to overcook it. Keep the chicken aside once it is tender and has turned reddish brown.
  4. Add the tomato-based sauce to a blender and churn it. You may need to add some water to make a smooth paste. Now heat a pan and add a little oil. Once the oil is warm, add a bay leaf and let it crackle. Then add the mix and let it simmer for a few minutes. Add the cashew powder and milk to the pan and let it cook for 5 minutes. Now add the chicken to the pan and mix well. Let it simmer for a minute or two, and then add water and bring the mixture to a boil.
  5. Add freshly whipped cream and garam masala. Season with salt and pepper. When the sauce begins to simmer, you can add some freshly ground Fenugreek leaves to add that ultimate aroma. Cover and cook for a minute or two.
  6. And your butter chicken is ready! Serve it along with some Roti, naan or kulcha, or even basmati rice.
