type 2. After fasting result (124) several months ago I have been
monitoring blood sugar. Average result 10 pm - 3 hours after
dinner (before bed) is 95. After fasting all night, blood sugar result
at 7 am (before coffee) is 120. Why (how can) blood sugar increase
with fasting?

Your body produces its own sugar. In the AM hours it is elevated because of hormonal activity. Contrary to popular belief, not eating sugar or carbohydrates of any kind will still result in elevated blood sugar as the body needs it to function properly.
