QuestionIs it better to coat your dried flowers with a acrylic spray before you coat them in poly resin? or can you just coat them in the resin with no problems, as long as your flower is TOTALLY dry?

I think that a coat of acrylic could interfere with some resins and cloud them. I would contact the manufacturer of the resin that you want to use and ask for their tech support person or the company's chemist and ask directly. It would be a shame to ruin a nicely prepared dry flower with a cloudy outcome!
As for resin and dry floral materials- yes - totally dry is adequate but not to the point of being brittle as the weight of the resin ( well, some resin brands anyway ) will break delicate petals in some species ( like violets for instance).
Do pay attention when coating with resin not to form bubbles . Best done by straight immersion without twisting or otherwise disturbing the mixture too much. if bubbles form have a wooden pick or other tool long enough to reach the bottom most part of your botanical in the mixing container and break them with a pointed object ( a thin , preferably coated, garden type wire will do if you have no bamboo skewers around).
