Easy Copycat Lofthouse Sugar Cookies with Aqua Blue Frosting

I’m a huge cookie fan! While I make most of my cookies over the holidays, I also try to find excuses to make cookies throughout the year. But one type of cookie I hadn’t made until recently was copycat Lofthouse sugar cookies. I’m a huge fan of store-bought Lofthouse sugar cookies, but I’m also very into making my own treats. The solution- to develop this delicious Aqua Blue Frosted Copycat Lofthouse Sugar Cookies recipe!

If you’ve never had Lofthouse cookies, you’re missing out! They’re best described as being like sugar cookies, but with a different, kind of more cake-like texture. They’re always topped with bright frosting and pretty sprinkles, just like my copycat ones!

Since it’s still spring, I went with a bright color scheme for mine, choosing a bright blue. But these would also make great birthday cookies or Mother’s Day cookies. And if you switched out the pastel sprinkles for blue and white ones, you’d have lovely Frozen themed cookies for yet another viewing of Frozen with the kids, or for when Frozen 2 eventually comes out! But really, you don’t need any reason to bake up a batch of these yummy copycat Lofthouse sugar cookies!

Aqua Blue Frosted Copycat Lofthouse Sugar Cookies

Makes approximately 2 dozen cookies

Cookie Ingredients

1 cup sugar
1/2 cup butter, softened to room temperature
2 eggs
1/2 cup sour cream
2 tsp. vanilla extract
3 cup flour
2 tsp baking powder
1/2 tsp. baking soda
1/2 tsp. salt (omit if using salted butter)
Pastel colored nonpareils

Frosting Ingredients

1/2 cup butter, softened to room temperature
2 cup powdered sugar
1 tsp. vanilla extract
1 tbsp. milk
Wilton teal gel food coloring

Frosting Directions

1. Using a hand or stand mixer, beat the softened butter for about 1 minute. Add in the powdered sugar a little bit at a time.
2. Add in the vanilla extract and milk.
3. Add a few drops of the teal gel food coloring to the frosting and stir to combine. After combining, add a few more drops of food coloring if needed and stir again.

1. Preheat the oven to 350 degrees.
2. Using a hand or stand mixer, combine the sugar and softened butter until smooth and creamy.
3. Add in the eggs, sour cream, and vanilla.
4. Slowly fold in the flour, baking powder, baking soda, and salt (omit the salt if you’re using salted butter).
5. Once all the ingredients are combined scoop about 2 tablespoons of dough and roll into a ball using your hands. My dough was a little bit sticky and that is OK. Place the cookies about 2-3″ apart on an ungreased baking sheet and gently pat down using your fingers.

7. Generously frost each cookie with the aqua blue frosting you made.
