Rhubarb has been used in recipes for a long time. Even if you haven’t cooked or baked with it a lot, I am willing to bet your grandma probably did. Rhubarb is one of those foods that is great all year, though it’s in season in the early summer months. We have been making this incredibly Delicious Rhubarb Crumble Recipe for a while, and it’s always a hit!

The sweet flavor in this rhubarb crumble is unforgettable. It’s made with oats, brown sugar, and cinnamon to give you a wonderfully spicy and delicious desert. Take it to a summer barbecue or winter potluck, and it will be one of the first desserts to disappear. Rhubarb is pretty inexpensive to buy, especially when you get it in season. If you love gardening, consider growing some, and you’ll be surprised by how easy it is to take care of.
Yield – (1) 7 x 11″ or 8.5 x 11″ baking dish
4 cups rhubarb (chopped)
1 1/4 cup all-purpose flour
1 cup oats
1 1/4 cup light brown sugar (packed)
1/2 cup melted butter
1 teaspoon ground cinnamon
Sugar Sauce
1 cup granulated sugar
2 tablespoons cornstarch
1 cup cold water
1 teaspoon vanilla extract
7 x 11″ or 8.5 x 11″ baking dish

1. Chop rhubarb and set aside. Mix together the flour, oats, cinnamon, brown sugar, and melted butter.
2. Press one-half of crumb mixture into a buttered 7 x 11″ or 8.5 x 11″ baking dish.
3. Whisk sugar, cornstarch, and water together in a glass bowl.

4. Microwave until thick, clear, and bubbly, approximately 3-5 minutes. Remove from microwave and whisk in vanilla. Add chopped rhubarb atop pressed-in crumb mixture in the baking dish. Pour sugar sauce evenly over rhubarb.

5. Top with remaining crumb mixture.
6. Bake at 350 degrees until edges are bubbling and the crumb topping is browned about 30-40 minutes. Let cool and enjoy!
