The major reasons are:
- lactose intolerance
- relatively high carbohydrate content for those concerned with counting carbs
- relatively high fat content in full-fat milks
- higher carb content in low-fat milks compared with full-fat milk
As to dairy products, it's a different story. For instance, yogurt made of whole milk has only 4 carbohydrate grams in 1/2 cup while the initial product, milk has 11 carb grams.
