1. Oyster Mushroom Soup:

How To Make:

  • Melt the olive oil in a large skillet over medium-high heat.
  • Add clean and chopped oyster mushrooms, chopped onion, and garlic and cook for 5 minutes, stirring frequently.
  • Pour 6 cups of chicken or vegetable stock into a large soup pot and bring to a boil.
  • As it comes to a boil, add chopped carrots to the onion/mushroom mixture and cook for 5 minutes.
  • Next, add chopped tomatoes to the skillet and cook for another 3 minutes.
  • Once the stock is boiling, add diced potato pieces to the soup pot and let them heat for 5 minutes. Now add everything from the skillet (onions, oyster mushrooms, garlic, tomatoes, and carrot) to the soup pot.
  • Turn down the heat to medium and cook everything together for 10 minutes or until you have reached your desired taste, texture, and warmth for all the ingredients.
  • Season with salt and pepper and serve.

2. Cream Of Wild Mushroom Soup With Cheesy-Garlic Croutons:

How To Make:

  • In a large ceramic or stainless steel pot, melt a blob of butter over medium-high flame.
  • Add one cup of finely chopped yellow onions, ½ cup chopped fresh celery, and chili pepper commonly known as cayenne and cook, stirring occasionally, until soft and tender.
  • Add minced garlic and saute for 30 seconds.
  • Now drop in the trimmed and sliced oyster mushrooms, shiitake mushroom, button mushroom. To this add coarsely chopped fresh thyme leaves, salt and pepper to taste, and stir them together until the mushrooms begin to give off their liquid.
  • You will see the mushrooms beginning to brown.
  • This will take approximately 7 minutes.
  • Add 1/3 cup of good quality brandy, and bring the mixture to a boil, and cook for an additional two minutes until it is glazed.
  • Add 6 cups of chicken stock and bring the mixture to boil again.
  • Now reduce the heat and let it simmer uncovered, for about 10 to 15 minutes stirring every few minutes.
  • Remove from the heat and gently puree the cooked mixture with a blender.
  • You may also use a food processor to blend the mixture well.
  • Now add a whole cup of cream, and cook on low heat for about 5 minutes.
  • Remove the almost ready soup from the flame and season with pepper and salt to taste.
  • The next step is to turn on your oven and preheat to 400 deg F.
  • Crush garlic into a paste and rub it generously on both sides of freshly baked French bread slices before placing them on a baking sheet.
  • Using a pastry brush, now generously brush one side of the slices with the premium quality edible olive oil.
  • Top the bread slices with a fine sprinkling of cheddar cheese and bake for about 5 minutes until the cheese turns soft and bubble.
  • Now remove from the oven and set aside.
  • Ladle the soup into ornate bowls and top each serving with two croutons for a sumptuous meal that your family is sure to compliment you for.

3. Oyster Mushroom Soup With Parmesan Cheese:

How To Make:

  • Heat olive oil and unsalted butter in a soup pot.
  • Sauté diced onions and minced garlic until translucent.
  • Add sliced mushrooms.
  • Cover and cook on medium heat until mushrooms are tender.
  • Add 3 cups chicken or vegetable broth, 2-tablespoon tomato paste and 3-ounce sherry.
  • Add salt and pepper to taste.
  • Simmer for 10 minutes.
  • Meanwhile, in a small bowl, beat three egg yolks and then mix in freshly grated parmesan cheese and ½ cup minced parsley.
  • When the 10 minutes are up, dip out about 2 cups of the soup into the bowl of egg yolk mixture. Stir until well blended.
  • Add this mixture back into the soup.
  • Simmer for 5 minutes.
  • Serve with your favorite bread.
