Authentic Hyderabadi Egg Biryani Recipes: 5 Delicious Variations

1. Egg Dum Biryani:
Ingredients:
- Onions large – 2
- Tomatoes large – 2
- Ginger garlic paste – 1 tbsp
- Red chilli powder – 2 tsp
- Coriander powder – 1 tbsp
- Egg curry masala / garam masala – 2 tsp
- Salt – as required
- Boiled eggs – 4
- Mint/ pudina leaves – handful
- Coriander leaves – handful
- Green chillis – 3
- Fennel seeds – 1 tsp
- Fried onions – 2 large sliced thin
- Mint leaves – handful
Steps:
- Cook rice and keep aside.
- Make a paste of coriander leaves, mint and green chillis.
- Now in a pan heat ghee and oil together and add onions and tomatoes. Fry till transparent.
- Add ginger-garlic paste and sauté for few minutes.
- Now add the mint paste, powder masalas and salt. Mix and cook till oil separates.
- Add the boiled eggs and coat them with the masala.
- In a different skillet pour some oil and fry onions till brown.
To assemble the dish, layer the bottom of the pan with egg masala and then put some rice over it. Repeat till the rice and masala are used up. Add the boiled eggs on top and cover with a lid. Do not keep the pan directly on fire, use a skillet. Cook for 20 minutes. This Hyderabadi egg dum biryani recipe is easy to prepare.
2. Hyderabadi Egg Biryani:
Ingredients:
- 4 cups basmati Rice
- 6 hard boiled Egg
- 1/2 cup curd
- 2 Onions
- 6 Green chillies
- 20-30 Mint leaves
- 1/2 bunch Coriander leaves
- 1/2 tsp Red Chilli powder
- 1/2 tsp Turmeric powder
- Salt according to taste
- Oil
- Ghee
- Whole Garam Masala
- 1/2 tbsp Garam Masala powder
- 1/2 tsp Lemon Juice
Steps:
- Parboil rice with whole garam masalas, chilli and salt.
- Make slits on boiled egg and marinate with red chilli powder, turmeric powder, powdered garam masala, curd and salt.
- Deep fry onions till brown and mix with green chilli, mint and coriander leaves.
- Drain the marinated eggs and pour mixture into a heavy bottom pan.
- Layer with onion mix and lime juice.
- Then put the rice on top. Cover and cook on slow heat for 20 minutes.
- Mix gently and serve.
3. Scrambled Egg Biryani:
Ingredients:
- 2 cups rice
- 4 cups water
- 6 eggs
- 1 onion
- 1 tsp garlic paste
- 2 Green chili
- 3 Cloves
- 2 Bay leaves
- 7 Black pepper
- 2 Brown Cardamom
- 1 tsp Red chili powder
- 1 tsp Garam Masala
- 1 tsp Coriander powder
- 1 tsp Cumin seeds
- 4 sticks Cinnamon
- 4 tbspVegetable oil
- Salt – as per taste
Steps:
- Heat oil in a pan and add all the garam masala to it.
- Then add green chillies, ginger-garlic paste and onion. Fry till golden brown.
- Now add all the powder masalas and cook for few minutes.
- Next add rice with double quantity of water. Cover and cook on medium flame.
- Then boil 3 eggs and keep aside. Put remaining eggs into a skillet to make scrambled egg.
- Mix scrambled egg with cooked rice.
- Arrange rice in middle of serving dish and decorate with boiled eggs.
4. Special Egg Biryani:
Ingredients:
- 3 tbsp Oil
- 1.5 cups rice
- 1Ginger garlic paste
- ½ cubed capsicums
- 1 onion
- 2 green chilies slit
- 5 boiled eggs
- 1 tomato chopped
- ⅛ tsp ground turmeric
- ½ tsp red chili powder
- 1 ½ tsp. Biryani masala powder
- mint and coriander leaves chopped
- Salt to taste
- 3 tbsp curd
- 2 ½ cups water
- 1 star anise
- 1 bay leaf
- ½ tsp. shahijeera
- 4 green cardamoms
- 4 cloves
- 1 inch cinnamon stick
- 1 strand of mace
Steps:
- Heat oil and fry the spices and onion till brown.
- Add ginger garlic paste and capsicums. Sauté.
- Then add tomatoes, mint, red chilli powder, turmeric, salt and yogurt and cook till mushy.
- Add eggs, masala and fry.
- Pour water, add rice and cook without covering.
- When little water is left, cover and cook on low flame.
- Serve hot.
5. Egg Biryani With Coconut Milk:
Ingredients:
- 1 cup of premium basmati rice
- 2 or 3 tsp of pure ghee made of cow’s milk
- Cinnamon, small stick
- cloves 4-5 nos
- Cardamom 3-4 nos.
- Star anise
- A large bay leaf
- Sprig of fresh coriander leaves (cilantro)
- Two sprigs of mint
- Green chillies, 2 nos
- Garlic, 3 cloves
- Ginger, 2 inches
- Large onions, finely sliced
- Ripe tomatoes, 2 large- cubed
- Red chilli powder, 1/2 tsp
- Turmeric powder, 1/4 tsp
- Jeera or cumin powder, 1 tsp
- Fennel seeds, 1 tsp
- Coriander powder, 1 tsp
- Thick and fresh coconut milk, 2 cups
- 2 tsp of biryani masala
- Ginger garlic paste, 1 tsp
- 3 large eggs
- Cashew nuts – a handful
Steps:
- Wash and soak basmati rice.
- Heat 2 tbsp ghee in a pan and add the cashews. Fry till golden then drain and keep aside.
- Add onions to the same pan and fry till golden. Keep aside.
- The onions and cashews will be used for garnishing.
- To the same pan add more ghee and sauté the spices.
- Make a paste of coriander leaves, mint leaves, green chillies, ginger, garlic and salt.
- Add the ground paste once spices are fragrant. Sauté.
- Add soaked rice and spice mixture to a pressure cooker along with 1.5 cups of water. Cook.
For The Egg Masala:
- Fry onions and ginger-garlic paste in ghee till brown.
- Next add spices and powders. Add tomatoes and fry.
- Then add coconut milk. Simmer till cooked.
- Now mix the cooked rice with this masala and serve hot.
