What does Po the Panda have to do with noodles? Well, if you are a three-year-old, everything! The famed Kung Fu Panda series stirred up a strong craving for noodles in my three-year-old son. He gobbles up a steaming bowl of the dish in minutes! And to make that bowl of noodles a healthy meal, I set about looking for simple vegetarian noodle recipes that my son would devour and not throw down the sink.

Here are five Chinese veg noodles recipes that you should try out!
1. Hot And Sour Fresh Noodles With Zucchini:
This noodle recipe’s tantalizing peanut oil and zucchini flavor can be a great weekend treat. This dish can be served to guests at dinners as well. It takes some time to prepare the dish but the effort is worth the result.
Ingredients:
- Peanut oil
- Finely chopped garlic, green chilli and red chilli
- Finely grated ginger
- Whole Sichuan peppercorns
- Dried red chillies
- Chilli Oil
- Light soy sauce
- Black rice vinegar
- Zucchini, sliced lengthwise
- Chopped fresh cilantro
- Fresh wheat-flour noodles
How To Make:
- Heat up a pan. Pour in peanut oil.
- Then stir-fry the ginger, red chillies, green chillies, and garlic.
- Next, add whole peppercorns and dry chillies.
- Add the rice vinegar, chilli oil and soy sauce to the pan.
- Boil the zucchini in water in another pan. Cook the noodles.
- Add noodles and zucchini to the main pan.
- Stir and mix everything well. Serve it warm.
2. Vegetable Chowmein:
This is a simple but authentic Chinese veg noodles recipe. It has the blended flavor of spinach, sesame seeds, and mushrooms. The dish goes well with tofu and several other gravy dishes.
Ingredients:
- Dried vegetarian noodles
- Vegetable oil
- Toasted sesame oil
- Minced garlic
- Fresh mushrooms
- Baby Spinach
- Chinese five-spice powder
- Light soy sauce
- Thinly sliced scallions
- Salt
- Toasted black and white sesame seeds
How To Make:
- Boil noodles in water and drain the water.
- Coat noodles with toasted sesame oil.
- Heat vegetable oil in a wok.
- Stir-fry the garlic.
- Add the mushrooms next and sprinkle the Chinese five-spice powder.
- Add the spinach and fry for a little while.
- Now add the cooked noodles and sprinkle salt and soy sauce.
- Before putting off the flame, add sliced scallions, sesame seeds and toss well.
3. Chilly Garlic Noodles:
This spicy noodle with chilli oil has a strong and smoky aroma. It is easy to prepare but tastes anything but ordinary. Ideal as a post-school snack, you can also prepare this as a weekend snack.
Ingredients:
- Chopped spring onion greens
- Oil
- Boiled noodles
- Salt
- Chilli-garlic sauce
- Chilli Oil
How To Make:
- Heat up a wok on high flame.
- Now add noodles, spring onion greens, salt and chilly-garlic sauce.
- Cook for some time and pour chilli oil on top.
- Toss well and serve hot.
4. Fresh Chinese Noodles With Mixed Mushrooms And Spinach:
Here comes an amazing recipe for Chinese noodles with vegetables. The flavor of spinach and mushrooms in this noodles dish will make the kids craving for more. The black pepper adds a spicy kick, which makes it yummy.
Ingredients:
- Fresh Chinese noodles
- Dark sesame oil
- Vegetable oil
- Fresh white mushrooms
- Garlic, minced
- Vegetable stock
- Natural soy sauce
- Ground black pepper
- Baby Spinach
How To Make:
- Cook the noodles and drain water.
- Heat up oil in a pan.
- Add the garlic and sauté. Then pour the mushrooms and stock.
- Next, add the spinach and cook.
- When everything is tender, add the noodles.
- Season using pepper and soy sauce.
5. Chinese Noodles With Tofu and Hazelnuts:
Tofu is rarely used in noodles. This veg Chinese noodles recipe, enriched with hazelnut and tofu has a very distinctive flavor.
Ingredients:
- Vegetarian noodles
- Roughly chopped coriander
- Olive oil
- Mange tout
- Chopped chilli
- Tofu pieced into cubes
- Toasted hazelnuts, chopped
- Chinese yellow bean sauce
How To Make:
- Cook the noodles and drain the water.
- Pour the oil over cooked noodles and mix some coriander.
- Stir-fry mange tout and then add chilli.
- Pour in yellow bean sauce, tofu and hazelnuts.
- Stir-fry and add the noodles. Serve it hot.
If you are throwing a party and intend on dishing out a five-course meal, noodles are one dish that you should not leave out of the menu.
