Freezing food involves a small loss of vitamins and minerals in the food due to the freezing process - the structure of enzymes in the food is also damaged slightly. The cell-walls of the food are damaged, affecting water-content, and also leading to quicker deterioration of the food once it thaws, compared to a slower deterioration with regard to raw food.
