QuestionAny experience with making jerky from organ meats?
AnswerNone, I'm afraid. I've just never felt the need to make things like pemmican or jerky whether with raw muscle-meats or raw organ-meats. Jerky is usually more of a favourite of people doing raw, zero-carb as they have fewer decent food-options when travelling far distances. I would assume, though, that the tougher organ-meats like tongue or heart would be more suitable for making jerky out of them, than softer organ-meats like liver or kidney.
