We all know how important breakfast is. But sometimes, a lack of time makes it difficult to have a decent breakfast. But just because you’re in a hurry doesn’t mean you need to skip breakfast or reach for something unhealthy! Instead, whip up a batch of these Quick and Healthy Breakfast Quesadillas!

If you’re not in a hurry, these breakfast quesadillas are easy enough for the kids to help make. Older kids can probably make them completely by themselves, especially if you have a quesadilla maker. We have one, and trust me, when you make quesadillas often enough, they really save you time, especially with the clean-up afterwards.

These quesadillas are really fast and easy to make, but have everything you need to start your day off right. The peanut butter gives you protein to keep you full, the berries give you vitamins (and their delicious flavor), and the chocolate chips give you energy. Pack that all into a delicious quesadilla, and you have a quick breakfast that’s easy to eat on the go!

You can turn these healthy breakfast quesadillas into a gluten-free recipe if you use gluten-free tortillas!

Quick and Healthy Breakfast Quesadillas

Ingredients

Small flour tortillas
Peanut butter (or almond butter, or nut-free alternative)
Fresh mixed berries, washed and sliced
Chocolate chips

Directions

1. Lightly grease a sauté pan with butter or oil and turn your burner to medium heat. Or pre-heat your quesadilla maker.

2. Spread a Tablespoon or two of peanut butter on two tortillas.
3. Arrange a handful of berries onto one peanut butter tortilla.
4. Top with about 10 chocolate chips.
5. Place the second peanut butter tortilla peanut butter side down onto the fruit filled tortilla.

6. Cook both sides until lightly browned, slice, and enjoy your healthy breakfast quesadilla!
