A moist, soft, and fluffy cake is one of my favorite snacks ever. I think it’s because it just takes you back to being a kid and visiting relatives. They always had the most delicious cakes and bread, and I love trying to replicate those nostalgic flavors. The hardest part of this scrumptious recipe is having to wait to eat it while the aroma fills the house. Here is my easy and delicious White Chocolate Cherry Snack Cake!

Once you sink your teeth into this snack cake, you are going to fall in love. It’s perfectly sweet, soft, and goes terrific with a cup of coffee! Take it to a family gathering or keep it to yourself, either way, it’s hard to get enough of the amazing flavors.
If you’ve never had a snack cake before, you’re going to love it! While bakers’ definitions of snack cakes can vary, they’re essentially informal cakes. They usually don’t have frosting, and are easier to put together. They may also have a different texture than traditional dessert cakes, which is why they can be great with a cup of tea or coffee, which don’t always pair well with more decadent dessert cakes. But trust me, snack cakes are just as wonderfully delicious as other types of cake, so definitely give this recipe a try!
Yields one 9 x 13″ cake.
12-ounce bag of white chocolate chips
2 cups tart cherries, can use frozen
3⁄4 cup granulated sugar
3⁄4 cup brown sugar
2 sticks unsalted butter, at room temperature
4 eggs
1 Tbsp vanilla extract
2 tsp baking powder
3 cups all-purpose flour
1 cup pecans, chopped
9 x 13″ cake pan

1. Reserve 1/3 of the white chocolate and place the remainder in a pan with the butter. Melt the chocolate and butter together, stirring frequently.

2. Line the bottom of the cake pan with parchment paper and butter it. Set aside.

3. Beat sugars, eggs, and vanilla together.

4. Add baking powder and flour. Mix together.

5. Stir in melted chocolate and butter mixture.

6. Add 2/3 of the chopped pecans and chopped cherries.

7. Spread batter evenly into pan. Sprinkle with remaining chopped pecans.

8. Bake at 350 degrees for 25-30 minutes or until toothpick poked in center comes out clean.

9. Let cool completely. Cut into squares. Enjoy!
