1. Spicy Roasted Potato Recipe: 

Ingredients:

  • 1 teaspoon of chilli powder
  • ½ teaspoon of garlic powder
  • ¼ teaspoon of onion powder
  • ¼ teaspoon of cayenne
  • 3/8 teaspoon of salt
  • 24 oz peeled gold potatoes
  • 24 oz of peeled orange sweet potatoes

Instructions:

  • Take a baking sheet and cover it with parchment paper.
  • Preheat the oven to 450 degrees F.
  • Take a small dry cup and mix the chilli powder, cumin, salt, garlic powder, cayenne and onion powder in it.
  • Peel the sweet potatoes and gold potatoes.
  • Cut each of them into 1 inch cubes and put them in a large straight-sided bowl.
  • Sprinkle the spice mixture on them in a way that the cubes are evenly coated with the spices.
  • Spread the pieces on the parchment lines baking sheet.
  • Make sure the cubes are not touching each other and bake for thirty minutes.

2. Oil Free Stir-Fried Sliced Potato Salad: 

Ingredients:

  • 3 medium sized potatoes
  • ½ cup of peas
  • 2 cups of mixed baby greens (spinach, angula)
  • 1 tablespoon of oregano
  • Salt (for taste)

Instructions:

  • Slice the potatoes lengthwise.
  • Preheat a non-stick pan.
  • Cook each slice for 1 to 2 minutes till you can see brown spots on them.
  • Keep all the slices aside once they are cooked.
  • Cook the peas for 10 to 15 minutes in the same pan. Make sure to stir frequently.
  • Take a salad bowl and combine all the ingredients in it together.
  • Add spices and salt for taste.   

3. Oil – Free Oven Roasted Potatoes With Rosemary And Thyme:

Ingredients:

  • 2 teaspoons each of dried rosemary and dried thyme
  • 700 grams of potatoes
  • 1 cup of vegan vegetable broth
  • Maldon salt and freshly ground black pepper (for taste)

Instructions:

  • Preheat oven to 390 degrees F.
  • Take a large bowl. Chop the potatoes into thick wedges and put them in it.
  • In another small bowl, whisk the vegetable broth and seasoning.
  • Using your hands mix all thoroughly.
  • Spread the potatoes and all the liquid onto a glass dish or a baking pan.
  • Make sure the vegetable broth is covering the bottom of the potatoes.
  • Place the dish into the preheat oven and stir every 15 minutes.
  • After about 1 hour when the potatoes have turned golden brown take the dish out and let the heat subside before serving.

4. Oil-Free Potato Pancakes:

Ingredients:

  • 1 large zucchini
  • 2 russet potatoes
  • ½ yellow onion
  • ½ teaspoon of freshly ground pepper
  • ½ cup of rolled oats and grounded (oat flour)

Instructions:

  • Preheat oven to 425 degrees F.
  • Take 2 sheet pans and cut 2 pieces of parchment paper the size of the pans.
  • Place the parchment paper pieces on the pans.
  • Grate the potatoes, onions and zucchini.
  • After you are done with grating, place half of them on a clean kitchen towel.
  • Roll the towel around the vegetables and wire the towel to make them dry.
  • Transfer the dried potatoes, onion and zucchinis into a mixing bowl.
  • Repeat the process with the remaining vegetables.
  • Add the ground oats and black pepper to the vegetable bowl and mix well. Ensure the flour is evenly distributed.
  • Pick up ¼ cup of potato mixture and shape it into a semi tight ball.
  • Flatten the ball using your palms to make a potato pancake.
  • Place it in a prepared pan and repeat the procedure with the remaining mix. The pancakes should be placed atleast 2 inches apart from each other to avoid sticking to each other.
  • Bake for about 15 minutes. Flip the flakes and bake for 15 more minutes. Serve with applesauce or any other plant-based topping.

Ingredients:

  • 2 tablespoons of all-purpose flour
  • 4 pounds of russet potatoes
  • Salt and pepper

Instructions:

  • Preheat oven to 450 degrees F.
  • Place the potatoes on cool water and peel them (this is to avoid discolouration)
  • Once peeled, cut the potatoes into small even pieces or wedges and place them in a pot.
  • Fill the pot with cold water enough to cover the potatoes.
