Hello: I rarely eat meat,but occasionally I get a craving for a nice meatloaf.I have a Cuisinart,and grind my own meat.What cut of beef should I go with to minimize cost and fat?

It depends on more than the cut, actually--it also depends on the grade of the meat and on the way the cows were raised.  Your butcher will be the best one to guide you.  Keep in mind that a meatloaf can become quite dry when using low fat beef, so be sure to add some flavorful liquids to keep it moist (broth, ketchup, bbq sauce, or whatever flavor you like!)  Mixing with rice, breadcrumbs or another starch will stretch the meat, reducing cost and also reducing fat further!
