QuestionHello: I was curious as to whether raw or cooked vegetables,such as broccoli,cauliflower,cabbage,carrots,etc are best eaten raw or cooked for maximum nutritional benefit.I make a homemade version of V8 juice in my blender,and have always used raw vegetables.Thanks!
AnswerFor maximum nutrition, raw are better. Steaming or microwaving conserve most of the nutrients so this is another good method. If vegetables are boiled for a long time, some of the water soluble nutrients end up in the water which is usually thrown away. They are still pretty good for you, though!
