AnswerPerfect time for a wedding! And it gives you a tonne of options for flowers too.
As August is considered late summer, you could go slightly into the fall-colors for flowers; burnt oranges,pinks, lime greens, and even the blue tones.

The important thing to remember if you decide you like the bolder colors involved, is to give your florist a swatch of your dress (easily obtained from an inside seam) so he/she can match the tones of the flowers properly. Flowers with bold colors will show beautifully against your dress and in your photos.
You can also go tone-on-tone. I would recommend this only if you are having an evening service as the darker tones of burgundy lend themselves to looking very formal.

I know you mentioned not being overly fond of doing white. I agree. I think white is very harsh for a burgundy dress, but the 'antique" whites would look very stunning, either on their own or in with some of the other colors:

I enjoy contrast and always told my brides to remember this one thing: Your flowers won't last forever, but your photos will. Think contrast. You want something in your bouquet to contrast with your dress.. either the way the stems are wrapped, some of the greenery, or the flowers... the examples above illustrate that as well.
