Homemade Chocolate Covered Pumpkin Pie Spice Apples

You can use any kind of apple you like, but I  recommend a tart apple to cut the sweetness. If you like things really sweet, a honeycrisp apple might be a good choice instead. Cut the recipe in half or double it to make just enough for what you need.

Also, I used walnuts as the garnish on my pumpkin pie spice apples. But you could easily leave those out and use sprinkles or small candy (like M&Ms) instead. You could even crush up a larger kind of candy to coat your chocolate covered apples with. In fact, these are a great way to use up leftover Halloween candy!

Makes 6 chocolate covered apples.

Ingredients

6 tart apples (Granny Smith & Fuji are particularly good with the chocolate)
1- 10-12 oz. bag of white chocolate chips
2 tsp. pumpkin pie spice
1 tsp.vanilla
optional- walnuts, crushed/chopped. You could also use candy or sprinkles.
6 8″ wooden skewers
optional- 6 fall themed straws or Halloween themed straws

Directions

1. Spread some wax paper on a cookie sheet

2. Wash apples well, then dry thoroughly with a clean towel to remove all wax.

3. Push a 8” skewer into the center of the apple, through the core, about 3”-4” in.

4. Place white chocolate chips in a microwave safe bowl and melt by heating it for 30 seconds at a time, stirring between each session until completely melted and smooth.

5. Stir vanilla and pumpkin pie spice into the chocolate to combine.

6. Use a rubber spatula to spread and smooth chocolate over apple.

7. While chocolate is still wet, dip into a bowl of crushed walnuts if desired (or candy/sprinkles of your choice).

8. Put your apple on the cookie sheet.

9. When all the apples are covered put them in the refrigerator until the chocolate sets (about 15 min).

10. To serve, slip a fun fall themed straw over your skewer if you like.
