Cheese can be considered nothing but controlled growth of mold. But unfortunately, there are some molds that can grow on cheese that be dangerous. When you bring home your cheese from the store, your fridge may not keep the cheese the same as the unit in the store. The store's fridge unit sometimes have humidity controls to keep the cheeses from molding.
Make sure your fridge temperature is set about 35 to 40 degrees to ensure the cheese will stay fresh.
Take your cheese out of the plastic it comes in from the store. Toss this plastic away.
Wrap your cheese in wax paper. This will enable your cheese to breathe, but stay fresh at the same time.
Use parchment paper if you don't have wax paper. Secure the parchment paper with tape if it does not stay closed.
Strong smelling cheeses like blue cheese should be double wrapped or placed in air tight containers to prevent the smell from spreading to your produce.
