Extra virgin olive oil is obtained from the first pressing of the olives, and is considered the highest quality in terms of flavour, aroma, etc. Virgin olive oil is obtained from the next pressing. While virgin and extra virgin olive oils are prized for their flavour, and are therefore more expensive, they are not nutritionally superior to non-virgin olive oils (which are obtained from further pressings of the olives). All olive oils contain heart-healthy monounsaturated fats and I highly recommend using olive oil, along with canola oil, as a regular part of your diet.
