DIY Honey from Sugar: A Simple Guide (No Bees Needed!)

You don't need bees to make honey. With a little effort, you can make your own honey, almost identical in taste to natural honey, with just a few clover and orange blossoms, some ordinary table sugar and 1 tsp. of alum.

  • Collect at least 50 clover blossoms. If possible, combine white and purple clover blossoms. Collect 2 cups of orange blossoms (or 20 Fireweed blossoms if you live in the northern part of the U.S. or in Canada).

  • Place clover blossoms and orange blossoms (or Fireweed blossoms) into a large, heavy pot or sauce pan with 2 1/2 cups of water. Cover and bring to a boil. Remove from stove and allow to simmer for 10 minutes.

  • Strain liquid into second large, heavy pot or sauce pan. Squeeze liquid from blossoms and let it strain into pot.

  • Add 10 cups of granulated white sugar to liquid. Add 1 tsp. of alum. Stir to dissolve. Bring to a boil uncovered. Reduce heat and continue boiling for 10 minutes. Siring constantly.

  • Ladle the somewhat-thickened mixture into clean jars, and seal. Allow jars to sit overnight. Open the following day and enjoy your homemade honey!
