Use the correct blade for easy kneading of heavy bread doughs. Though many food processors come with a plastic dough blade, these have too small of a diameter to properly mix and knead small loaves of bread, according to Cuisinart, a maker of food processors. Use the S-shaped metal blade for the smallest of bread dough batches, those requiring less than 3 ½ cups of flour, to ensure successful mixing and kneading every time.
Fit the S-shaped metal blade into the work bowl of the food processor according to your manufacturer's instructions for the model.
Mix the yeast with the water required in your recipe and set this aside to proof (make sure the yeast is still active) for 10 minutes.
Add the dry ingredients from the bread recipe into the work bowl and cover with the lid.
Process the dry ingredients for 20 seconds to combine.
Pour the liquid ingredients, including the proofed yeast, through the feeding chute of the food processor while it runs.
Begin timing from when the dough pulls away from the sides of the work bowl and continue to operate the food processor for 80 seconds to knead the dough.
Stop the processor and open the top. Feel the texture of the dough for a smooth, elastic, but slightly sticky consistency, indicating that it has been properly kneaded.
Remove the dough from the food processor and continue to follow your recipe as directed for rising, shaping and baking the dough.
